Eugsi is the name of the protein ricg seeds of the cucurbitaceous plants, which after being dried and ground are used as a major ingredients in West African dishes.
Egusi seeds are comprised of 50% oil, 78% of which is an unsaturated fatty acid, and 35% protein. The seeds are rich in vitamin A which helps form and maintain healthy teeth and bones. It has vitamin B1 and B2 which are important for body growth and production of red blood cells. It has lots of other vitamins.
